Arroz con Leche (Rice and Milk Pudding)



Arroz con Leche (Rice and Milk Pudding)

Ingredients:
1 cup of rice
2 cups of water
5 ½ cups of milk (can use skim milk, soy milk or almond milk)
2 cinnamon sticks
2 cups of sugar
½ teaspoon of salt
Cinnamon powder
½ cup of raisins (optional)

Procedure:
1. Wash the rice in a sieve until the water runs clear
2. In a large heavy-bottomed pot place the water and rice.
3. Cook until rice begins to soften and the water has almost completely consumed.
4. Add in the milk, salt and cinnamon.
5. Cook over high heat until it boils and reduce the heat to medium for 15 minutes, stirring constantly with a wooden spoon.
6. Stir in the sugar and cook for 30-35 minutes until the milk begins to thicken (remember that it thickens more when it cools down).
7. If you are adding raisins, add them now
8. Remove from heat, place in a bowl and sprinkle with cinnamon powder.
